Fresh Purple Hull Peas in the Instant Pot/Pressure Cooker

So, I’ve been playing with the new gadget. Overall, the Instant Pot is pretty handy. While I think some recipes I have seen go overboard in trying to make it the end-all-be-all, “lets cook everything in it” wunderkind, I still can see using it a couple of times a week. Thus far, it’s worth the investment.

My awesome neighbor dropped by a couple of days ago with a big bag of freshly shelled purple hull peas from the farm. Score! Local food and purple hulls I didn’t have to shell myself? Can’t beat that with a stick. I knew these would work fairly well in the pressure cooker, so I tossed them in and ended up with perfectly cooked, delicious peas in record time. Here’s how I did it:

Fresh Purple Hull Peas in the Instant Pot/Pressure Cooker

Prep Time 5 minutes
Cook Time 30 minutes

Ingredients
  

  • 6 cups fresh shelled purple hull peas
  • 1 ham hock
  • 4 cups chicken broth
  • 1/2 tbsp kosher salt (plus more for additional seasoning if needed)
  • 1 tsp black pepper
  • 1 splash olive oil supposedly this helps beans/peas not foam like crazy, so I added it as a precaution

Instructions
 

  • Place peas, ham hock, chicken broth, 1/2 TBS of salt, pepper, and olive oil in the Instant Pot/pressure cooker. Attach lid and set pot to "manual" for 20 minutes. Allow pressure to release naturally. Taste peas for seasoning and add additional salt if needed.

One thing I really appreciated about cooking the peas in the pressure cooker was that I did not steam up my kitchen by simmering them on the stove for hours. The heat index is 102 degrees today, so you can see how that also helps tip the scales onto the “it’s ok I splurged on a trendy thing” side. At least, that’s what I’ll keep telling myself.

  2. I hope you liked it Shannon! Fresh peas are awesome, and I liked not heating up the kitchen by simmering them for hours. Looks like Cajun 15 bean soup is on deck for dinner next.

    • Thanks Tracy! I loved that they kept a decent texture but were still tender and flavorful.

    • Absolutely. You can also add aromatics like sautéed onion and bell pepper. I am making black eyed peas today and will be posting a recipe later this week. Overall, black eyed peas and purple-hulls are interchangeable.

  5. Any ideas for his long to cook this recipe using frozen peas? Thanks!

    • I have not tested this but I think you could back up the time to 10 to 15 minutes on manual, still NPR. Frozen peas have been blanched and have more moisture in them than fresh. I’d keep liquid the same for now, but instinct tell me you could probably reduce the chicken broth by about a cup if needed.

  6. I used my new IP Duo 6 qt yesterday for purple hulls, & husband said the best ever! I have cooked peas forever, and agree with him. Although my favorites are lady peas, it was so nice to just dump in the IP, set, and leave, and not have to worry about boiling over, and cooking forever.

    I did add 1 T. sugar to mine, as always put a little in peas and lima beans. And convinced the chicken broth was a super addition for me.

    MY IP was new, as had bought on Amazon Prime Day. I had to call IP as mine did not have a ‘manual’ button on it, although manual downloaded from their website showed one. Evidently there is a newer model, but IP support said to use the ‘pressure’ button instead of manual, for anyone who might get a new one but obviously not the newest model.

  7. I only have almost 3 cups of fresh Purple hull peas. How do I recalculate the cooking instructions.

  8. I had frozen field peas and snaps(28oz.) added 14 oz. smoked turkey sausage, salt, pepper and added a large sweet potato in 1/2” cubes. I’m waiting for the natural release. I’ll let you know how it turns out

  9. This was the best ever! I used frozen purple hull peas and it turned out great. Accompanied it with some Cajun style smoked andouille sausage and cornbread.

  10. Wonderful! I used frozen purple hulls. I added onion and garlic. I also cooked my ham hock with the chicken broth on low pressure for an hour before I added the other ingredients! So good!
